About

Akitoshi Itoh is a pioneering roboticist whose research bridges bioinspired design and intelligent automation for the food industry. His work focuses on two key areas: developing novel aquatic propulsion mechanisms and creating robotic systems for complex meat processing. In his highly cited 2006 study, Itoh introduced bioinspired aquatic robots using real-time variable stiffness fins, including a Paramecium-like robot propelled by ionic conducting polymer gel film actuators and a fish-like robot, demonstrating how adaptive stiffness can mimic natural swimming efficiency.
