Abstract
Meat is a highly nutritious animal product relished by majority of the population in India. India produced around 6.2 million MT of meat in 2013, standing at fifth position in world meat production and accounts for only 3 per cent of total meat production in the world. Apart from the use of irradiation, high pressure and ultra sound waves to improve the microbiological quality of meat, use of hydrodynamic waves for meat tenderization, robotics in meat processing etc are recent advances in the meat sector. Meat mincer is primarily used for particle size reduction in meat processing. Value addition of by-products for edible, medicinal, industrial uses can be taken up only in an organized manner on a large scale. Value addition helps to make full utilization of the carcass, including edible offals. Indian meat industry is growing at a rapid rate, more stress is put on the production, marketing of fresh meat to suit the preference of local population.
