Abstract

The food and beverage (F&B) industry is witnessing a remarkable transformation driven by emerging technologies that are revolutionizing every aspect of the culinary landscape. There is a paradigm change happening with the adoption of new technologies like artificial intelligence (AI) and the Internet of Things (IoT), transforming how food is processed, distributed, and shopped. Given that the production side of things is a constant, complicated process that cannot afford production delays or a halt, these new capabilities have had the most influence here by reducing losses and downtime such that F&B giants are using AI to handle these processes. These solutions make it easier for everyone in the integrated supply chain of manufacturers, utilities, stakeholders, workers, and vendors to manage equipment and goods. Augmented and virtual reality are being used to maintain food goods better, maximize earnings, and grow enterprises. Coca-Cola employs AI to let customers add the preferred components to create personalized drinks and flavors are suggested based on user research. Eateries are running similar tests with online AI applications. They examine consumer eating habits to propose restaurants and even suggest healthful meals depending on medical conditions. Virtual reality (VR) technology is being employed by food and beverage companies to demonstrate to customers how their products are made, including how they are procured from distant farms or how their well-known craft beer is brewed. Robots are now employed as waiters and cooks in restaurants; a few examples are the brand Café X-, a fully automated, cashless coffee shop at San Francisco; pizza-making robots used by Zume Pizza, in northern California; first robot-based restaurant in India, located in Coimbatore where food is delivered by robots there. In the realm of smart kitchens, advanced sensors, AI, and IoT technologies have converged to create intelligent cooking environments. Examples include self-regulating ovens, cutting-edge food processors that utilize AI to suggest personalized recipes, and smart refrigerators capable of inventory management and automated grocery replenishment. These innovations not only enhance culinary convenience but also foster sustainable practices by minimizing food waste. So, this chapter throws light on the innovative technologies being used in smart kitchens and delivery applications, disruptions created by technology, and ways to manage it smartly in the current fast-paced educated environment globally. It presents innovative food delivery models and provides suggestions to the hospitality industry worldwide by studying smart kitchen trends across nations. Since now customers need quick, innovative, and economical production of food and beverage, it shows the smart way forward where smart kitchens immersing metaverse would be the new normal.
